Blockchain, an alternative technology for food safety: Traceability of agri-food products

Abstract

Foods of animal and plant origin are vulnerable to hazards that compromise food safety; in turn, food supply chains require strict measures to guarantee this safety. Incorporating blockchain technology into traceability could improve supply chain efficiency and increase consumer confidence. The objective was to explore the use of blockchain applications to improve food safety and traceability of agri-food products. A literature review was conducted using the PRISMA method, employing a qualitative and analytical approach. It has been observed that the international increase in food products has created various challenges, specifically in the agri-food industry. Blockchain has been widely accepted as an excellent option for achieving trust and data security. It has been determined that food safety, the supply chain, and traceability share the common goal of ensuring compliance with regulatory standards for food production and distribution. One drawback of blockchain is that its use is only cost-effective for high-value livestock products and large players in the food industry. One solution for improving food safety and traceability in the agri-food supply chain is the application of blockchain. Its implementation tends to strengthen the processes for recalling affected product batches, directly contributing to food safety.
