Resumen

En un entorno altamente competitivo donde prima la máxima satisfacción, la perfilación de consumo constituye un elemento fundamental. No obstante, los modelos de preferencia de consumo actuales se orientan a procedimientos deductivos que producen estereotipos genéricos. El objetivo de esta investigación fue diseñar una metodología de medición del perfil de preferencias de consumo de vino a partir de un análisis estructural del comportamiento métrico de la calidad percibida por los consumidores.  Con un estudio cuantitativo, de tipo no experimental, transeccional y explicativo se determinaron las dimensiones fundamentales de la perfilación del consumo de vino. Se determinó un modelo de influencia fuerte de características organolépticas en concordancia con los efectos post consumo. Además, se puede afirmar que las dimensiones óptimas para medir la calidad del vino en estudiantes universitarios están estructuradas por las características organolépticas, características físicas, características de marketing, efectos de consumo y elementos estratégicos.
