Wine consumption preferences among university students in the city of Ambato

Abstract

In a highly competitive environment where maximum satisfaction is paramount, consumer profiling is a fundamental element. However, current consumer preference models rely on deductive procedures that produce generic stereotypes. The objective of this research was to design a methodology for measuring wine consumer preference profiles based on a structural analysis of the metric behavior of perceived quality. A quantitative, non-experimental, cross-sectional, and explanatory study was used to determine the fundamental dimensions of wine consumption profiling. A model of strong influence of organoleptic characteristics was established in accordance with post-consumption effects. Furthermore, it can be stated that the optimal dimensions for measuring wine quality among university students are structured by organoleptic characteristics, physical characteristics, marketing characteristics, consumption effects, and strategic elements.
